We use casks made of oak from the Limousin region of France. The characteristics of this oak are its porosity and a high content of tannins, both of which make it an ideal wood to start the next process in developing our cognacs.

During the ageing period the force of the eau-de-vie diminishes and becomes rounded. The oak renders aroma and perfume as well as an amber gold colour. The maturation, and subsequent transformation, contribute nobility and exclusivity to the creation of cognac.

The interaction between the air, the eau-de-vie and the tannins is one of the secrets of cognac. During this process, about 2% of our stock is lost annually through evaporation. This is known as « la part des anges » - the angels’ share, and a rather expensive share it is, too.
